There are a lot of numbers available. Racing reference has everything you would need. There are people that model NASCAR but primarily fantasy. I'm sure people are modeling it outside of fantasy as well but the smart guys seem primarily interested in fantasy and especially the GPP contests.

I'm sure you can win more at betting because there are limitations with fantasy which is why they focus on GPP I am guessing. Big pots in fantasy and probably a little easier to win as well. Probably fantasy being legal and most fantasy people not being bettors is probably the biggest factor.
Total handle probably a lot bigger in fantasy I am guessing.
